I just love, love, love eating CARBS! Sweet or salty. It doesn’t matter. Some days I’m on carb overload. However, lately I’ve come to realize that I don’t feel good after eating a lot of carbs. I feel sluggish. No energy. One of my favorite summertime activities is to load up on books from the library or bookstore and read to my heart’s content. Unfortunately, eating carbs in excess with lack of physical activity will likely result in weight gain. It has for me.
The other day someone mentioned that they were on the Keto diet and had lost quite a bit of weight in the past 10 months. To be honest, I’d never heard of it so I decided to do some research. I learned that Keto is a high-fat, moderate protein and low carb diet. Supposedly, it is an effective weight-loss tool. It focuses on eating REAL FOOD. I googled some recipes, made up a grocery list and spent a hundred dollars more than I usually spend on groceries. Yikes! … this Keto diet is expensive!
For dinner tonight I made Chicken Parmesan stuffed with asparagus. I butterflied 4 chicken breasts. Spread some cream cheese on them. Spiced them up with salt, pepper and garlic. Placed 4 stalks of asparagus on top and folded over the chicken breast and held it together with toothpicks. Then I browned them in a frying pan.
Once they were browned, I transferred them to a baking dish. I poured marinara sauce over them and topped them off with mozzeralla cheese.
Once assembled, I popped them in the oven and baked for 30 minutes. In the meantime, I prepared a healthy spinach salad as a side.
I removed the chicken breasts from the oven and plated them. They looked beautiful and were oh so good! I can honestly say that I was not looking to snack right after dinner. I felt satisfied.
From what I can see, everything on this diet is gluten free. I sure hope I can maintain this healthy way of eating and not start to miss potatoes, rice and pasta.
